Here are ideas for what you can put in a vegan fried breakfast:

Vegan bacon, fried

Vegan sausages

Potato cubes, oven roasted in a little bit of oil

Potato Waffles

Scrambled tofu

Mediterranean scrambled tofu

Baked Beans

Mushrooms

Tomatoes, cut in half, topped with crushed garlic, herbs, olive oil, salt and pepper, and roasted for about 15 minutes.
