Mediterranean Scrambled Tofu

Serves: 2
Cooking Time: 10 minutes

1 block smoked tofu
1 tbsp olive oil
1/2 red onion
1/2 courgette
1/2 red pepper
Mixed herbs
Salt and pepper

1) Finely chop the onion, courgette and pepper.
2) Fry the vegetables until softened.
3) Crumble the tofu into the vegetable mixture.
4) Season to taste with herbs, salt and pepper.
