I can’t wait to make these with our home-grown pears this autumn!
4 Pears – the juicy sort are better than the crunchy sort
1 lemon (grated rind and juice)
About 300ml of cider, apple juice or fruity red/white wine
A cinnamon stick. You could use a bit of grated nutmeg and a couple of cloves as well.
1) Peel pears, cut them in half and take out the cores.
2) Put them into a frying pan with the lemon juice and rind, and the cider, apple juice or wine. Add cinnamon and other spices if you’re using them.
3) Simmer for 10 minutes, then remove the pears and continue to simmer the liquid for at another 10-15 minutes.
4) Put the pears back into the pan with the reduced ‘sauce’ to heat through, then serve them with the sauce spooned over the top.
