Vegetable Curry

Serves 4
Cooking Time: 20 minutes

Vegetable oil
1 onion
1 clove garlic
1/2 a cauliflower – broken into florets
2 potatoes – peeled and diced
2 carrots – peeled and sliced
100g (4 oz) peas
1/2 tsp ground cumin
1/2 tsp ground turmeric
1 chopped green chilli pepper or 1/2 tsp chilli powder
1/2 tsp sugar
1/2 tsp vecon stock paste or 1/2 tsp salt
About 75ml (3 fl oz) water

1) Heat oil in a large saucepan. Add onion and garlic and fry with the spices.
2) Add all the other ingredients and simmer for about 20 minutes until the potatoes are cooked, adding more water if necessary.
