Red Lentil and Tomato Curry

Serves: 4
Cooking Time: 30 minutes

2 tablespoons of vegetable oil
1 onion
2 cloves of garlic
2 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/2 tsp chilli powder
150g (6 oz) red lentils
750ml (1 1/4 pints) water or vegetable stock
1 tin of chopped tomatoes
Salt or stock cube

1) Chop onion and garlic. Heat the oil in a large saucepan, and fry the onions and garlic with the spices for about 5 minutes over a moderate heat.
2) Add lentils, tomatoes and water, bring to the boil and simmer for 30 minutes. Add more water if it gets too dry and starts to stick to the bottom of the pan.
3) Season to taste and serve with rice or naan and lime pickle.
