Quick Mexican Tortillas

Serves: 2
Cooking Time: 15 minutes

1 red onion
1 red or yellow pepper, chopped
1 courgette
1 tbsp mexican seasoning mix (or 1 teaspoon mild chilli powder and a clove of crushed garlic)
tortilla wraps (or tacos or tortilla chips)

1) Chop onion and fry for a few minutes in a bit of vegetable oil.
2) Stir in about a tablespoon of seasoning mix.
3)Chop the courgette and add it to the onion.
4) Chop pepper and add that, then fry until slightly browned.
5) Good served in a tortilla with guacamole and rice.
