Pan-Fried Potato Scallops

Makes Serves 4
Cooking Time 10 minutes per batch

800g (2 lbs) of potatoes
Vegetable oil

1) Cut potatoes into slices (no more than 1cm thick).
2) Heat a few tablespoons of oil and fry potatoes on both sides until browned and cooked through.
3) Drain on kitchen paper before serving.
