Nut Roast

Serves: 4-6
Oven Temperature: 200ºC/400ºF/Gas 6
Cooking Time: 60-70 minutes

Ingredients
150g (6 oz) red lentils
300g (12 oz) mixed nuts (200g (8 oz) peanuts or cashew nuts and 100g (4 oz) other nuts, like walnuts, hazelnuts, brazils, works well)
1/2 tin tomatoes
1 tbsp peanut butter
Thyme or mixed herbs
Salt (or crumbled stock cube) and pepper

Instructions
1) Cook lentils in water for about 20 minutes.
2) Put nuts in a blender until finely chopped. Add all other ingredients and blend for a couple of seconds.
3) Press mixture into a greased loaf tin and cook for about 1 hour at 200ºC until solid and browned.
