Cooking Time: 30 minutes
2 cloves garlic
2 sticks of celery
1 small head of broccoli – broken into florets
1 tin chopped tomatoes
Water – about 500ml.
150 g red lentils
1 tsp dried thyme
Stock cube, 1 tsp vecon or salt and pepper
1) Chop the onion, garlic, carrot and celery. Fry in a little oil until softened. Stir in the broccoli florets.
2) Add the other ingredients.
3) Cook for about 30 minutes until the lentils are cooked, adding more water if necessary.
