Dhiranandi’s Surprise Salad

Serves 4

Cooking Time 7 minutes

1 large avocado
50g (2oz) alfalfa sprouts
1 head of brocolli
1 tbsp pickled jalapeno peppers
2 tablespoons chopped sundried tomatoes
1 tablespoon of lime juice

1) Break the broccoli into florets, cook in boiling water until just cooked (5-7 minutes) and then leave to cool.
2) Put the alfalfa sprouts, chillies, tomatoes and broccoli in a bowl.
3)Halve the avocado and remove the stone, then peel and chop. Add it to the salad, along with 1 tablespoon of lime juice.
